Cafe Rio barbecoa, ham & cheese soup

In a previous post, I mentioned that I was going to try out a recipe for Cafe Rio’s pork babecoa. It’s awesome stuff, it’s like Kentucky Fried Chicken – you get addicted to it so easily, you have to go back over and over again, and you’re not even repulsed by all the grease, or the visions of horribly fat people who can’t even get up to go to KFC, and hire neighbor kids to bring them buckets of extra crispy…

I digress.

Anyways, the recipe test went well. I totally screwed up the proportions, but it was just a test to see if it was close. It was indeed close. It ended up tasting watered down, overly spicy, and not sweet enough. But, all the elements were there, it’s just a matter of fine-tuning the balance at this point. I’d wager the actual, full recipe works great. I’ll find out this Sunday, when I make it for my siblings. I’ll let you know then. But, for now, I’d highly recommend this recipe. Oh, slight change though – opt for Coke instead of Pepsi – it had this slightly funny pepsi-esk flavor when I used the Pepsi.

On a side note, thanks to Bethany, Christine is now exchanging cooking duties with her mother. What does that mean? Well, since we live close by, and since we drop our adorable dog off at her house anyways, and since neither of them love to cook for the sake of cooking, now Christine is giong to start making some meals and splitting them in half for the Petersens, and Kathleen will do the same, giving us some food sometimes. I don’t know the details beyond that. So far, we’ve gotten some great beef stew and Hawaiian haystacks out of the deal. Tomorrow, they get some potato-ham-cheese soup. It’s good. The recipe is from here. I’d recommend it, though with a bit more cheese than is listed there. And plenty of salt. And don’t do what I did and dump all the potato-broth down the drain. Use it grasshopper.

Now we just need to make some of those beans like Dad showed me, some really good pico de gallo, some very fresh tortillas (Christine’s coworkers say to go to Walmart Marketplace – they have a tortillaria in there). Yeah, I love excuses to cook!

    so just today i figured out that i have to click on your post blurb to get the whole post. i’m a little slow, i guess. i kind of don’t like all the clicking. why not just have the whole post on the page? just curious.

    “all the clicking”? It’s one click. I just do it because I don’t like having a really long main page – I like writing excerpts too.
